Ingredients

  • 4 ounce fresh mushrooms sliced
  • 1 bn green onions with tops sliced
  • 2 Tbsp. margarine
  • 6 ounce frzn crab meat Egg substitute equal to 8 Large eggs
  • 1/2 tsp grated lemon
  • 1 c. low-fat Monterey Jack cheese
  • 1 Tbsp. snipped fresh basil
  • 2 Tbsp. grated Parmesan cheese

Directions

  1. Cook mushrooms and onions in margarine in a 10-inch oven-proof skillet till tender, about 10 min. Thaw and drain crab meat. Stir into the mushrooms and onions. Blend egg substitutes, lemon rind and pepper. Add in cheese and basil. Pour over crab meat mix. Cover and cook over medium-low heat till Large eggs are set and light brown on bottom, about 8 to 10 min.
  2. Set oven to broil. Sprinkle frittata with Parmesan cheese. Broil frittata about 5 inches from heat till golden. Cut into wedges and serve immediately.
  3. This recipe yields 6 servings.
