Frijoles De Olla Con Arroz Poblana

Ingredients

  • 1 lb Beans (black, pink or possibly pinto)
  • 12 c. Water
  • 1 x Onion halved
  • 3 sprg Fresh epazote
  • 2 Tbsp. Lard or possibly vegetable oil

Directions

  1. Clean the beans, removing all stones or possibly chaff. Rinse them well. In a pot large sufficient to hold the beans plus water to cover, let them soak, overnight. Drain. Add in the 12 c. of water or possibly more to cover. Add in the onion, epazote, and lard. Simmer, covered, till tender about 1 1/2 to 2 hrs. Add in water when necessary.
  2. This recipe yields 6 to 8 servings.
