  • Frijoles A La Charra (Savory Beans)

    Ingredients

    • 1 c. Pink beans, dry, or possibly pinto
    • 1/4 lb Pork rind, fresh, cut into small squares
    • 1/4 x Onion, sliced
    • 2 cl Garlic, finely minced
    • 1 1/4 tsp Salt
    • 1/4 lb Bacon, cut into small pcs
    • 2 Tbsp. Lard, or possibly pork drippings
    • 2 med Tomato, peeled, seeded and minced, juice strained and reserved
    • 3 x Serrano chilies, stemmed and finely minced
    • 2 lrg Coriander sprigs

    Directions

    1. Put the beans, pork-rind squares, onion and garlic into a bean pot or possibly large saucepan. Add in 6 c. of water and bring it to a boil. Reduce the heat, cover the pot, and let the beans cook gently till they are tender, about 1 1/2 hrs. Add in the salt and cook the beans, uncovered, for another 15 min.
    2. In a separate pan, cook the bacon gently in the lard or possibly drippings till it is slightly browned. Add in the tomatoes with their juice, and stir in the chilies and coriander. Cook the tomato mix over a fairly high heat for about 10 min, till it is well seasoned and thick.
    3. Add in the tomato mix to the beans and let everything cook, uncovered, over low heat for about 15 min.
    4. Serve in small individual bowls with grilled meat, or possibly add in some more liquid and serve as a soup. misc04
