  • Fried Zucchini (Zucchini Fritte)

    Ingredients

    • 2 lb zucchini
    • 1 1/2 c. extra-virgin extra virgin olive oil
    • 1 x garlic clove left whole
    • 1 tsp granulated sugar
    • 4 x mint leaves - (to 5) roughly minced
    • 3 Tbsp. raisins
    • 8 Tbsp. vinegar

    Directions

    1. Wash the zucchini and slice into 1/2- to 3/4-inch rounds. Coat the bottom of a 8- to 10-inch frying pan with 3/4-inch extra-virgin extra virgin olive oil. Heat oil to 360 to 365 degrees. Add in the garlic and, stirring constantly, cook over high heat till warm but not smoking. Remove the garlic as soon as it begins to darken in color.
    2. Working in batches, add in the zucchini rounds to the frying pan and cook till golden, about 3 to 5 min on each side. Remove to dry on a serving platter lined with paper towels. Repeat the process till all the zucchini are fried.
    3. Place all the zucchini back in the frying pan over medium heat. Sprinkle with the sugar, mint, and raisins. Mix together till well combined. Carefully add in the vinegar. Cover and turn off the heat. Allow to sit 5 min before serving.
    4. This recipe yields 6 servings.
