Fried Rice
Only 4 Weight Watchers points per 3/4 C serving Ingredients
- 2 Sprays of cooking spray
- 2 large eggs, lightly beaten
- 1 C shredded carrots
- 1 C scallions, sliced, divided
- 3 C cooked white rice
- 1/4 C low sodium soy sauce
Directions
- Coat large nonstick skillet with cooking spray. Warm pan over medium high heat. Add eggs, tilt pan so eggs cover bottom. When eggs start to set, break/cut into pieces. Cook about one minute more. Remove from skillet and set aside.
- Re-coat skillet and saute carrots and all but 2 T scallions until carrots are tender, about 2-3 minutes.
- Stir in cooked rice and soy sauce. Cook until heated through, stirring once or twice (approx one minute).
- Gently stir in cooked egg and remaining scallion.
- Heat through.
