  • Fried Grouper With Papaya Relish

    Ingredients

    • 1 c. All-purpose flour
    • 3 x Large eggs
    • 2 Tbsp. Vegetable oil
    • 1 c. Bread crumbs
    • 1/2 c. Cornmeal
    • 1 tsp Salt
    • 1 tsp Freshly-grnd black pepper
    • 1 1/2 lb Grouper fillets all skin and bones removed
    • 1/4 c. Vegetable oil
    • 1 x Papaya - (abt 1 lb)
    • 2 Tbsp. Light brown sugar
    • 1 x Lime juiced
    • 1 sm Red onion peeled, diced fine
    • 1 sm Red pepper diced fine
    • 1 x Scotch bonnet pepper (optional)

    Directions

    1. Use the three dish arrangement for the breading process: A separate dish for each of the three elements of breading, preferably flat and with 1- to 2-inch sides to better hold the breading ingredients.
    2. Place the flour in one dish, beat the Large eggs with the oil in another dish and mix the bread crumbs and cornmeal with the salt and pepper in the third.
    3. Cut the grouper into 4 to 5 oz pcs. Dip and dredge the grouper first through the flour, then dip into the egg mix and finally dredge in the dry crumbs last. Chill the fish till ready to cook.
    4. Make the relish by peeling and seeding the papaya, cutting it into slices and mixing the papaya in a bowl with the sugar, lime juice, onion, red pepper and the (if you like) warm Scotch bonnet pepper. Let this marinate for no longer than 1 hour before serving.
    5. Heat the 1/4 c. vegetable oil in a large saute/fry pan over medium heat. Add in several pcs of breaded fish at a time to the warm oil and cook for 4 to 5 min, turning occasionally, till the fish is golden and still moist inside.
    6. Serve with a green salad and the papaya relish.
    7. This recipe yields 4 to 6 servings.
