Ingredients

  • 6 med Tomatoes Peeled, Quartered, Seeded
  • 2 1/2 c. Tomato Juice, Low Sodium
  • 1 med Onion Cut In 1" Pieces
  • 2 x Cloves Garlic
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 3 Tbsp. I Cannot Believe It's Not Butter - Light Or possibly Margarine Or possibly Butter
  • 3 Tbsp. All-Purpose Flour
  • 14 1/2 ounce Vegetable Broth Fresh Basil If you like

Directions

  1. Position multipurpose blade in work bowl of food processor. Add in tomatoes, tomato juice, onion, basil leaves, garlic, salt and pepper. Process till finely minced, about 10 seconds. Pour mix into large saucepan. Heat to boiling. Reduce heat to low. Cover. Cook 10 minutes, stirring occasionally.
  2. Heat margarine in small saucepan over med heat. Add in flour, stirring till smooth. Cook 1 minutes, stirring constantly. Gradually stir in broth. Cook till thickened and bubbly, stirring constantly. Gradually stir sauce into tomato mix. Cook 2 minutes, till thoroughly heated. Garnish soup with sprigs of fresh bail, if you like.
  3. Yield: 6 servings (1 C per serving)
