Fresh Spinach Salad With Orange Curry Dressing

  • 1 c. cider vinegar
  • 2 Tbsp. orange marmalade
  • 2 tsp curry pwdr
  • 1/2 c. sugar
  • 2 tsp dry mustard
  • 2 tsp salt
  • 1 tsp freshly grnd pepper
  • 1/2 tsp Tabasco sauce
  • 1 3/4 c. vegetable oil
  • 4 bn fresh spinach, trimmed
  • 6 x Red Delicious apples, minced
  • 2 c. golden brown raisins
  • 1 3/4 c. walnut halves
  • 6 x green onions, minced
  • 1/4 c. sesame seeds, toasted
  • 1 lb bacon, minced, crisp-fried, crumbled


  1. For The Dressing:Combine the vinegar, marmalade, curry pwdr, sugar, mustard, salt, pepper and Tabasco sauce in a blender container.
  2. Add in the oil in a fine stream, processing constantly at high speed till thickened.
  3. Let stand at room temperature for 2 hrs. Chill, covered, in the refrigerator till serving time.
  4. For The Salad:Arrange equal amounts of the spinach on 12 salad plates. Drizzle with the dressing.
  5. Sprinkle each serving with the apples, raisins, walnuts, green onions, sesame seeds and bacon bits.
  6. Serve immediately.
