  • Fresh Pasta With Smoke Salmon And Noilly Prat

    Ingredients

    • 500 gm fresh pasta of your choice
    • 10 x spring onions trimmed and sliced
    • 2 Tbsp. extra virgin olive oil
    • 2 x fresh kaffir lime leaves (optional) finely shredded
    • 1 x lime grated zest and juice
    • 100 ml noilly prat
    • 300 ml c. vegetable stock
    • 6 Tbsp. creme fraiche
    • 225 gm smoked salmon pcs
    • 1 x salt and freshly grnd black pepper

    Directions

    1. Bring a large pan of salted water to the boil to cook the pasta.
    2. Meanwhile cook the onions in the oil for 5 min in a large covered frying pan on the floor of the roasting oven. Add in the kaffir limo leaves and lime juice to the onions then add in the noilly prat and stock and cook till slightly reduced on the simmering plate.
    3. Cook the pasta in the boiling water for 4 to 5 min.
    4. Stir the creme fraiche into the sauce and cook till thickened then add in the smoked salmon lime zest and seasonings to taste just as the past is cooked.
    5. Just hot the salmon to not really cook it or possibly it can become slightly tough and almost ham like.
    6. Drain the cooked pasta thoroughly toss it into the sauce then serve immediately.
    7. noilly prat is my favourite vermouth for drinking and for cooking as it has a real clarity and freshness of flavour. This is a typical meal in a rush dish for those who have a large supermarket nearby.
    8. Serves 4
