  • Fresh Herb Rubbed Salmon Fillets

    Ingredients

    • 1/4 c. parsley - (tightly packed)
    • 1/4 c. cilantro - (tightly packed)
    • 1 1/2 tsp chili pwdr
    • 1/2 tsp salt
    • 1/4 tsp garlic pwdr
    • 1/4 tsp onion pwdr
    • 1/4 tsp grnd Mediterranean oregano
    • 1/8 tsp freshly-grnd black pepper
    • 3 Tbsp. extra virgin olive oil
    • 4 x salmon fillets - (abt 4 to 5 ounce ea)
    • 1/2 tsp salt

    Directions

    1. In food processor process all herb paste ingredients till smooth.
    2. Season the salmon fillets with salt and spread about 1 Tbsp. herb paste on flesh side of each salmon fillet. Cover and marinate in refrigerator for 1 to 12 hrs.
    3. Place marinated fillets in center of cooking grate. Grill 6 to 10 min or possibly till fish is opaque and flesh flakes easily with a fork.
    4. This recipe yields 4 servings.
