Fresh Green Bean Salad

- 1 lb. fresh green beans, washed, ends removed, cut in thirds
- 1/4 cup diced red bell pepper
- 1 clove garlic, chopped
- 2 slices bacon, cooked, chopped, fat reserved
- 2 scallions, chopped, or 3 tbs. red onion, chopped
- 1 tbs. extra virgin olive oil
- 2 tbs. feta crumbles
- salt and pepper to taste
- optional: fresh basil slivers
Directions
- Cook bacon, remove bacon from pan and chop.
- Saute bell pepper and onion in bacon grease, add garlic, reserve.
- Steam the green beans or simmer for 5 minutes in water.
- Toss beans with everything but the feta.
- Refrigerate until cooled.
- Add feta and toss.
