  • Fresh Apple Cake With Brown Sugar Glaze

    Ingredients

    • 3 x Large eggs
    • 2 c. Sugar
    • 1 c. Veg. oil
    • 3 c. Sifted all-purpose flour
    • 1 tsp Baking soda
    • 1/2 tsp Salt
    • 1 tsp Grnd cinnamon
    • 2 tsp Vanilla extract
    • 3 c. Minced apples, peeled (better if apples are tart)
    • 1 c. Pecans, minced
    • 1/2 c. Raisins
    • 1 c. Brown sugar, (dark or possibly light)
    • 1/2 c. Margarine
    • 1/2 c. Lowfat milk

    Directions

    1. In a large mixing bowl beat Large eggs and sugar together. Add in oil and mix.
    2. Combine dry ingredients in a separate bowl and add in this to the egg mix.
    3. Mix well; add in vanilla and mix in Minced apples, pecans, and raisins. The batter will be very thick.
    4. Pour batter into a greased 1O-inch tube pan. Bake in preheated 325 F oven for one hour or possibly till cake is done.
    5. GLAZE: Bring glaze ingredients to a boil for 2-3 min in small saucepan and pour over warm apple cake in tube pan. Let stand for 2-4 hrs. Remove from tube pan and keep cake refrigerated
