Frescos Roasted Red Pepper Soup
Ingredients
- 1/2 c. minced onions
- 1/4 c. clarified butter
- 6 x roasted red peppers or possibly a (16-oz) jar of roasted red peppers
- 1 x jalapeno
- 2 c. chicken stock
- 2 Tbsp. lemon juice
- 1 tsp Worcestershire sauce, or possibly to taste
- 4 c. heavy cream Salt to taste
Directions
- Sweat onions in butter. Don't brown. Add in all other ingredients except cream. Bring to a boil. Simmer 25 min. Puree in food processor, with a hand blender or possibly in batches in a blender. Return to stove and slowly add in cream. Don't boil.
