      EmailTweet 0 Full-screen French Onion Cauliflower By Leslie Blythe  Cheese, Side dish  Roasting, Sautéing February 17, 2021 I love French Onion Soup and decided to take the idea and transform a head of cauliflower. It turned out rather delicious. I caramelized some onions and topped the florets with some Gruyère cheese and croutons. I went back into my archives and found my recipe for French Onion Chicken Meatballs, which is also a winner. Prep: 10 mins Cook: 25 mins Yields: 4 Servings Ingredients 2 tablespoons olive oil, divided 1 onion, halved and sliced 1 teaspoon Worcestershire sauce 2 tablespoons dry sherry salt and pepper, to taste 1 head cauliflower, cut into florets ½ teaspoon garlic powder ½ cup Gruyère cheese, shredded croutons Directions 1Preheat oven to 425° F.
 2Heat 1 tablespoon oil in a large skillet over medium heat. Add onion and cook, stirring occasionally, for 5 minutes. Add Worcestershire, sherry, salt, and pepper; reduce heat to medium-low and continue cooking, stirring often, until golden brown, 10 to 15 minutes more. Remove from heat.

 3Meanwhile, arrange cauliflower florets on a baking sheet with cooking spray.
Combine the remaining 1 tablespoon oil with garlic powder and salt in a bowl and stir to combine. Roast until tender, about 10 minutes. Remove from oven and top with the reserved caramelized onions, cheese and croutons.
