Frank's Favorite Chicken Salad

I make this after holidays to use up leftover craisins and dried apricots, which I use in Holiday Broccoli Salad. Serve with croissants or honey wheat bread with lettuce and tomato, or crackers. Ingredients
- 2 cups diced chicken (or turkey)
- 1 large stalk celery, minced
- 2 scallions, minced
- 1 1/2 tbs. each minced craisins and dried apricots
- 1 tsp. white wine or cider vinegar
- mayonnaise to taste ( I like to use about 2/3 cup)
- 2 tbs. toasted nuts, such as almonds or pecans
- 1 tbs. chopped parsley
- dash Tabasco
- salt and pepper to taste
Directions
- Combine ingredients in a bowl.
- Cover and refrigerate overnight.
