    Ingredients

    • 1-LB COOKED , CANNED OR FRESH PINK SALMON 1 SMALL ONION
    • 1 EGG BEATEN, 1/2 CUP SOFT BREAD CRUMBS(I USE FRESHLY MADE) 1TBSP WORCESTERSHIRE SAUCE
    • 1/4 TO 1/2 TSP HOT SAUCE, 1/4TSP BLACK PEPPER
    • 1 CUP SHREDDED SHARP CHEDDAR CHEESE, 1TBSP
    • FINELY CHOPPED PARSLEY, 1/4 CUP FLOUR, 4 TBSP BUTTER, OR MARGARINE , LEMON WEDGES(FOR GARNISH)

    Directions

    1. DRAIN AND PICK OVER CANNED SALMON CAREFULLY TO
    2. REMOVE DARK CARTILAGE AND BONES
    3. FINELY CHOP THE ONION, USING A FORK , FLAKE THE
    4. SALMON AND THEN COMBINE IN A MEDIUM BOWL
    5. WITH THE ONION EGG, BREAD CRUMBS ,WORCHESTERSHIRE
    6. SAUCE , HOT SAUCE BLACK PEPPER , CHEESE, PARSLEY
    7. USING ABOUT, 1/3 CUP SALMON MIXTURE FOR EACH CAKE
    8. SHAPE THE MIXTURE INTO ROUNDS ABOUT 1/2 INCH THICK
    9. SPRINKLE THE FLOUR ON A PLATE OR BOARD, DREDGE THE
    10. PATTIES IN THE FLOUR COATING WELL, BUT DUSTING OFF THE EXCESS FLOUR. PLACE THE PATTIES IN THE REFRIGERATOR AND LET IT SET FOR 30 MINUTES OR LONGER
    11. HEAT THE BUTTER OR MARGARINE IN A LARGE SKILLET UNTIL FOAMY AND HOT . ADD THE PATTIES AND BROWN ON BOTH
    12. SIDES COOKING ABOUT 5 MINUTES. REMOVE FROM THE PAN AND DRAIN ON PAPER TOWELS. SERVE IMMEDIATELY WHILE WARM, I LIKE THEM AT ROOM TEMP, WITH LEMON WEDGES AS GARNISH AND SQUEEZE ON THE CROQUETTES
