The current advice on grilling protein is to leave it on the grill until a one-flip cooking process completes. Nonsense.

Ingredients

  • Steak, chicken, chops, fish, or any other protein slab.

Directions

  1. Think about it. The idea of grilling a steak (beef, pork, fish, or chicken) on one side and flipping it once is nonsense. I owned and operated one of largest grilling restaurants in America. Flipping is good. Do NOT cut or in any other way open the steak while cooking. Just keep it whole and flip to make a perfect outer darkening.
  2. Cutting releases the juices. Flipping does not. But don't flip a lot, you'll break the bark.
