• Five ingredient cookies / muffins - pecan fudge pie

    These are somewhere between a cookie and a muffin, and they are absolutely delicious.


    • Pecans (125 grams)
    • Sugar (220 grams)
    • Flour (60 grams)
    • Butter/margarine (150 grams)
    • Eggs (2)


    1. Simply mix everything together - you may need to soften the butter first if it is straight from the fridge.
    2. Spoon the mixture into a muffin tray. You can add a little more flour for a firmer consistency and use a baking sheet if you prefer.
    3. Cook at 350 degrees for 20 to 25 minutes (they will not rise much so don't use this as a guide to whether they are cooked).
    4. Cool on a wire rack.
