    Ingredients

    • 2 T low sodium taco seasoning
    • 1 t. sugar
    • 1 T flour
    • 1 lb. frozen fish fillets
    • 12 corn tortillas
    • 1/2 head shredded red cabbage
    • 1/4 c + 1 T cider vinegar
    • 3 T sugar divided
    • 1 t salt
    • 1 1/2 T olive oil
    • Spray canola oil

    Directions

    1. For the cabbage: Combine cider vinegar, 1 T sugar, salt and olive oil stirring until sugar and salt dissolve. Mix with shredded cabbage. Stir in remaining 2 T sugar. Allow to sit at least 30 min. to wilt.
    2. For the fish: Combine taco seasoning, sugar and flour. Slice cod fillets into finger sized pieces. Sprinkle with seasoning mixture. spray non-stick pan with canola oil. saute fish over medium heat until lightly browned and cooked through.
    3. Heat tortillas in a small skillet until warm and flexible. Add fish fillet and top with sweet & sour red cabbage.
