    Ingredients

    • 2 x white fish fillets - (abt 6 ounce ea) skin and bones removed Salt to taste Freshly-grnd black pepper to taste
    • 1/4 c. dry white wine
    • 2 tsp butter or possibly margarine cut into pcs
    • 1/4 c. tiny cooked shrimp - (2 ounce)
    • 1 tsp chopped flat-leaf parsley

    Directions

    1. Preheat the oven to 400 degrees. Season the fillets with salt and pepper and arrange them on a baking pan. Pour the wine over and dot with the butter.
    2. Bake, uncovered, till the fish is just opaque through the thickest part, 6 to 10 min, depending on thickness of the fish. Transfer the fillets to hot plates and cover with foil.
    3. Pour the pan juices into a saucepan and boil, stirring occasionally, till the liquid is reduced to about 2 Tbsp.. Add in the shrimp and parsley to the sauce and simmer till warm, about 1 minute longer. Taste the sauce for seasoning and spoon it over the fish.
    4. This recipe yields 2 servings.
    5. Comments: A year-round treat: fish fillets plus a few ounces of sweet cooked and peeled shrimp for the sauce. Talk about convenience food!
