Finnish Christmas Cookies

Ingredients

  • 2 cups butter, softened
  • 1 cup sugar
  • 4 cups flour
  • 1 egg, lightly beaten
  • 2/3 cup finely chopped almonds
  • Colored sugar, optional

Directions

  1. In a large bowl, cream the butter and sugar until light and fluffy
  2. Gradually beat in the flour
  3. Mix well
  4. Cover and refrigerate for one hour
  5. Roll out onto a well-floured surface to 1/4 inch thickness
  6. Brush lightly with the egg
  7. Sprinkle with the almonds and sugar if desired
  8. Using a fluted pastry cutter or knife, cut into 2 inch x 1 inch strips
  9. Place 1 inch apart onto ungreased baking sheets
  10. Bake at 350 for 10-12 minutes or until lightly browned
  11. Cool on wire racks
