Filet Mignon With Sauteed Onions

Ingredients

  • 2 tsp cracked pepper
  • 1/2 tsp salt
  • 2 x garlic cloves chopped
  • 4 x (4-oz) beef tenderloin steaks (1 inch thick) Cooking spray
  • 1 c. thinly sliced onion separated into rings
  • 2/3 c. dry red wine
  • 2 Tbsp. steak sauce (such as Heinz 57)

Directions

  1. Combine first 3 ingredients in a small bowl; rub both sides of beef with pepper mix. Place beef on a broiler pan coated with cooking spray; broil 5 min on each side or possibly till desired degree of doneness. Set aside; keep hot.
  2. Place a medium nonstick skillet coated with cooking spray over medium-high heat. Add in onion to skillet; cover and cook 5 min, stirring occasionally. Remove onion from skillet; set aside, and keep hot. Add in wine to skillet, scraping pan to loosen the browned bits. Cook over medium-high heat till reduced to 1/3 c. (about 1 minute), and stir in steak sauce. Spoon wine sauce over steaks, and top with onion.
  3. Serving Size: 1 steak, 1/4 c. onions, and 1 Tbsp. sauce
