Fig Jam with Balsamic Vinegar and Rosemary

- 10-12 Fresh Figs
- 1 cup sugar
- Zest from 1/2 lemon
- Juice from 1/2 the lemon
- 2 Tablespoons Balsamic Vinegar
- Pinch of chopped fresh Rosemary
- Pinch of salt
Directions
- Chop figs into 1 inch pieces
- Add all ingredients into deep sauce pan
- Let sit for 30 mins. Stir occasionally
- After 30 mins and mixer has had a time to liquefy turn on heat and bring to a boil. Stirring frequently
- Once boiling, reduce to a simmer for 10-15 mins, stirring occasionally
- Remove from heat and let cool.
- Mash up a bit more with a fork or wooden spoon
- Store in airtight container.
