  • Fig Honey Cookies

    Ingredients

    • 1 c. Dry figs
    • 1/2 c. Shortening
    • 2 lrg Large eggs well beaten
    • 3 tsp Baking pwdr
    • 3 Tbsp. Orange rind minced
    • 1/2 c. Coconut
    • 1/2 tsp Salt
    • 3/4 c. Sugar
    • 1/2 c. Honey
    • 2 3/4 c. All-purpose flour
    • 2 Tbsp. Lowfat milk
    • 1 tsp Lemon extract

    Directions

    1. Wash figs, cover with cool water. Simmer 10 min. Drain. Cut in pcs. Cream sugar and shortening. Add in honey, Large eggs, and lowfat milk. Mix thoroughly. Sift flour, measure, and sift with baking pwdr, and salt.
    2. Add in to sugar and shortening mix. Add in fruit, coconut, and flavoring. Add in orange rind. Mix thoroughly.
    3. Drop by teaspoonfuls onto well-oiled baking sheet. Bake in warm oven (435 F) 12-15 min. 36 servings.
