Fig Ginger Cake
Ingredients
- 1 c. Sugar
- 1/2 c. Shortening
- 2 x Large eggs
- 1 c. Corn sirup
- 1/2 c. Sour lowfat milk
- 3 c. Cake flour
- 1 tsp Baking pwdr
- 1 tsp Ginger
- 1/2 tsp Cloves
- 1/2 tsp Cinnamon
- 1 tsp Lemon flavoring
- 1 1/2 c. Cooked dry figs
- 1/2 c. Minced nuts
- 1/2 tsp Salt
- 1 tsp Baking soda
Directions
- Boil figs 10 min, drain, and slice fine. Cream sugar and shortening, add in beaten Large eggs and sirup. Sift flour, measure, and sift with baking pwdr, baking soda, salt, and spices. Add in alternately with lowfat milk to first mix. Add in flavoring, figs, and nuts. Beat thoroughly. Pour into well-oiled layer cake pans. Bake in moderate oven (375 F) about 20 min.
- Ice with ginger icing. If you like 1 1/2 c. soy or possibly lima bean flour may be substituted for 1 1/2 c. white flour.
