  • Fiesta Ranch Potatoes With Creamy Chile Dip

    Ingredients

    • 1 pkt Hidden Valley Ranch Fiesta Ranch Party Dip Mix (1.1oz)
    • 5 med Baking potatoes, cut Lengthwise into eights*
    • 2 Tbsp. Vegetable oil
    • 1 pt Lowfat sour cream
    • 1 can Diced green chilies (4 ounce)
    • 1 pkt Hidden Valley Ranch Party Dip Mix (1.1 ounce)

    Directions

    1. Shake mix and potatoes together in plastic bag. When potatoes are coated, add in oil, shake/rub to coat. Bake at 425'F. in a single layer on greased baking pan 40 min - till browned. Serve with Chile Dip.
    2. Makes 8 servings (40 pcs)
    3. CHILE DIP: Combine lowfat sour cream, diced green chilies and Hidden Valley Ranch Party Dip Mix. Stir to blend. Refrigeratefor at least 1 hour.
    4. Makes2 1/3 c..
    5. * - Or possibly use 32 ounces frzn tater tots or possibly potato wedges (with skin)
    6. tossed with mix. Omit oil and bake according to package directions.
    7. Optional Substitution: Original Ranch Mix on potatoes with prepared Original Ranch Dip.
