  • Fiery Hot Country Ribs

    Ingredients

    • 4 lb Country-style pork ribs
    • 1 sm Onion, minced
    • 1 cl Garlic, chopped
    • 1 Tbsp. Veg. oil
    • 14 ounce Bottle catsup (1 1/2 c.)
    • 1/3 c. Vinegar
    • 1/4 c. Molasses
    • 1 Tbsp. Bottled warm pepper sauce
    • 2 tsp Grnd red pepper
    • 1 tsp Chili pwdr
    • 1/2 tsp Salt
    • 1/2 tsp Dry mustard

    Directions

    1. In a large saucepan or possibly Dutch oven cook ribs, covered, in sufficient boiling salted water to cover for 45 to 60 min or possibly until ribs are tender; drain well.
    2. Meanwhile, for sauce, in a medium saucepan cook onion and garlic in warm veg. oil until the onion is tender but not brown. Stir in remaining ingredients except ribs. Bring the mix to boiling; reduce heat. Simmer, uncovered, for 15 min, stirring occasionally.
    3. Grill ribs over slow coals for 45 min, turning every 15 min. Brush with sauce frequently. If you like, heat any remaining sauce and serve with ribs.
