  • Field Greens With Candied Walnuts, Bacon And Goat Cheese In A B

    Ingredients

    • 1/4 c. brown sugar, packed
    • 1 c. walnut halves
    • 2 Tbsp. water
    • 1 c. balsamic vinegar
    • 1/2 c. pure maple syrup
    • 1/4 c. shallots, chopped
    • 3 c. extra virgin olive oil
    • 2 tsp salt
    • 1 tsp pepper
    • 8 c. assorted baby field greens, such as endive radicchio, frisee, red oak leaf or possibly spinach
    • 12 slc bacon (crisp fried), crumbled
    • 1/2 c. goat cheese, crumbled

    Directions

    1. Field Greens w/ Candied Walnuts, Bacon & Goat Cheese in a Balsamic Maple Vinaigrette, (entire title)
    2. For The Candied Walnut:Cook the brown sugar in a large heavy skillet over medium-high heat till melted.
    3. Add in the walnuts and water. Cook for 10 min or possibly till the water evaporates, stirring constantly.
    4. Spread the walnuts on a sheet pan and let stand to dry.
    5. Store in an airtight container.
    6. For The Vinaigrette:Combine the vinegar, syrup, shallots, extra virgin olive oil, and pepper in a jar with a tight fitting lid.
    7. Shake vigorously to mix; chill.
    8. For The Salad
    9. Mix the greens, bacon, cheese and walnuts in large salad bowl.
    10. Drizzle 1/2 c. of the vinaigrette over the salad, tossing gently to coat.
    11. Note:This is our house dressing which is delicious with any mixed greens, but this combination is especially good.
