Then add the onions and garlic. cook them until they get tender. It should be about 3 mins.Now add in tomato paste and pureed tomato. Give it a good stir.Season your sauce with dried mint, black pepper and salt. Now cook until everything is blended.Finally pour the cream and let it simmer for about 5 minutes until the sauce thickens. That’s it!If you want, you can also add in parmesan. This way you will have tomato alfredo sauce, which is creamier and richer. Or you can simply use the parmesan as a topping at the end.How To Make Pasta With Tomato Cream SauceMaking this creamy tomato pasta is really simple.Cook fettuccine or your favorite type of pasta in boiling water uncovered for 8-10 minutes. Drain it reserving 1/2 cup of pasta water.Make the sauce. Sauté onion and garlic with olive oil in a skillet. Add in the tomato paste and pureed tomato. Cook for a few minutes over medium low heat. Season the sauce with a little dried mint, black pepper and salt. Let it simmer for some minutes and then pour heavy cream. Cook for another 5 minutes so that the sauce gets thicker. You will end up with an amazingly flavorful creamy sauce. Nothing could go wrong with it.Toss the fettuccine and parmesan with the sauce and cook them together for 3-4 minutes, stirring occasionally. Add in the reserved pasta water gradually. You might not need to use all of it. It depends on the consistency of the sauce.Garnish it with herbs like green onions or parsley.Note: Parmesan is not a must in this recipe, you can use whatever cheese you like. Crumbled goat cheese would be fine too. After it starts to boil, you should reduce the heat and let it simmer uncovered until it gets the consistency you want. Make sure you give the sauce a stir occasionally.Add a teaspoon of cornstarch in your sauce. It will not change the taste but it will make the sauce a lot thicker.Use a few tablespoons of pasta water in your sauce. You have two combination options:milk+butter+flourmilk+corn starchIf you go for the first combination, add 1/4 cup of melted butter in 3/4 cup of milk and mix them well. This way you will have 1 cup of heavy cream. If it is still not thick enough, add in a tablespoon of flour and give it a good stir.You can also combine 2 tablespoons of corn starch and 1 cup of cold milk. With this mix, you can substitute 1 cup of heavy cream.How can I prevent milk from curdling when making the sauce?If you are planning to use milk instead of cream, you had better mix it with starch and then add it into the simmering sauce. If you pour milk as it is right into the sauce, it will curdle, but starch helps prevent this.Also, it is better to add the milk and starch mixture gradually. If you pour all of it into the simmering sauce, it might curdle. Tempering will definitely prevent this.How can I keep cream sauce from separating?We have three methods for this:Cook your sauce over medium low or low heat.
