Feta Turkey Burgers with Gluten Free Buns

This recipe I have made several times and it always gets a warm welcome. The buns are a sweet sourdough. They can be made more visually appealing, just spend more time than I did smoothing them out before the rising process.

Ingredients

  • THE BUNS
  • 1 cup soy flour
  • 1/2 cup brown rice flour
  • 1/2 cup tapioca flour
  • 1/2 cup potato starch
  • 1/2 cup millet flour
  • 1 teaspoon garlic salt
  • 1 cup milk
  • 2 tablespoons cider vinegar
  • 2 1/2 teaspoons Xanthan gum
  • 1/2 cup warm water
  • 1 tablespoon vegetable oil
  • 4 large eggs
  • 1 teaspoon dried rosemary (crushed)
  • 1 packet active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons of honey
  • THE TURKEY BURGERS
  • 1.21 lbs ground turkey
  • 1 teaspoon garlic salt
  • 1 teaspoon dried thyme (crushed)
  • 1 teaspoon dried rosemary (crushed)
  • 1/4 teaspoon black pepper
  • 2 tablespoons feta cheese crumbles
  • 1 egg yolk

Directions

  1. Mix the sugar the yeast and the warm water together in a warm bowl and let sit aside to become frothy. (bloom)
  2. Mix the milk, vegetable oil, and cider vinegar together in advance and set out to come to room temperature.
  3. Mix the remaining dry ingredients with a whisk in your stand mixer bowl. Make a well in the center to hold the eggs and the liquid ingredients. With dough hooks attached begin mixing the flour mixture into the liquid ingredients. Add the honey and the vanilla at this step.
  4. Divide dough into 3 equal parts. Divide each third in half. leaving 6 balls of dough. with amply oiled hands smooth the dough into a smooth round topped bun shape. Place on greased pan and cover with a damp cloth. Set in a warm location to rise.Approximately 30 to 45 minutes rise time is plenty. Do not punch down. Simply brush with an egg yolk mixed with one tablespoon water and place in oven preheated to 350 degrees for 30 to 45 minuted.
  5. Now for the meat,there is no real trick here, toss all these ingredients a bowl and using your hands, re-channel your childhood and squish, squash, mash, mix and have fun. When it is fully blended divide into 4 equal parts. Hand work and press out 4 patties. I fried them in a nonstick skillet without any additional grease or butter.
  6. We topped then with a generous pile of feta cheese a slice of vidalia sweet onions and a local grown delicious tomato with some mayo.
