Ingredients

  • 1/3 c. minced onion
  • 1 x garlic clove, chopped
  • 2 tsp extra virgin olive oil or possibly canola oil
  • 1 can (14 1/2 ounce.) Italian Diced Tomatoes, liquid removed
  • 1 1/2 tsp chopped fresh basil or possibly 1/2 teaspoon dry basil
  • 1 lb walleye, bass or possibly other white fish fillets
  • 4 ounce crumbled feta cheese

Directions

  1. In a saucepan, saute/fry onion and garlic in oil till tender. Add in tomatoes and basil. Bring to a boil. Reduce heat, simmer, uncovered, for 5 minutes. Meanwhile, broil fish 4-6 inches from the heat for 5-6 min. Top each fillet with tomato mix and cheese. Broil 5-7 min longer or possibly till fish flakes easily with a fork. 4 servings
