    Ingredients

    • 1 tbsp fennel seed, crushed
    • 2 tbsp boiling water
    • 3/4 cup butter, softened
    • 2/3 cup packed brown sugar
    • 1 egg
    • 2 cups flour
    • 1/2 tsp baking soda
    • Confectioners' sugar

    Directions

    1. In a small bowl, soak the fennel seed in the boiling water
    2. Set aside
    3. In a large bowl, cream the butter and brown sugar
    4. Beat in the egg
    5. Drain the fennel seed
    6. Combine the flour, baking soda, and fennel seed
    7. Gradually add to the creamed mixture
    8. Roll into 1-inch balls
    9. Place 2 inches apart onto ungreased baking sheets
    10. Bake at 350 F for 10-12 minutes or until lightly browned
    11. Roll the warm cookies in the confectioners' sugar
    12. Cool on wire racks
