  • Fennel Salad With Soy Green Goddess Dressing

    Ingredients

    • 10 ounce Green peas, fresh or possibly frzn
    • 1/2 c. Soy lowfat milk
    • 2 Tbsp. Lemon juice
    • 2 x Garlic cloves, chopped
    • 3 sprg mint
    • 6 x Leaves fresh basil, minced Salt and pepper to taste
    • 1 x Fennel bulb, sliced
    • 1 med Cucumber, peeled, seeded, and sliced
    • 4 x Scallions, white and tender green parts, minced
    • 2 c. Shredded carrots
    • 1 lb Mixed salad greens, washed and spun dry
    • 1 c. Soy sprouts
    • 1 c. Roasted soy nuts

    Directions

    1. In a food processor or possibly blender, puree the peas, soy lowfat milk, lemon juice, garlic, mint, basil, salt, and pepper. Chill.
    2. In a bowl, combine the fennel, cucumber, scallions, carrots, and greens.
    3. Toss the dressing with the salad. Sprinkle the soy sprouts and soy nuts over the salad. Serve immediately.
    4. Yield: 6 servings
