  • Favorite Lima Bean Soup

    Ingredients

    • 1 x (2-3 lb.) piece smoked ham shank or possibly hocks
    • 1 lb Dry lima beans
    • 2 1/2 quart Water
    • 1/4 c. Diced salt pork or possibly bacon
    • 3/4 c. Diced carrots
    • 3/4 c. Minced onion
    • 3/4 c. Minced celery
    • 3/4 c. Diced potatoes
    • 1 1/2 tsp Salt
    • 1/4 tsp Pepper
    • 1 Tbsp. Minced parsley (optional)

    Directions

    1. Wash beans and put into water. Soak overnight. Or possibly, bring water to boiling point; add in washed beans; boil for 2 min only; cover; remove fron heat; allow to stand for 1 hour. (This is equal to 12 to 15 hrs soaking in cool water.)
    2. Cook salt pork or possibly bacon till lightly crisp. Add in to beans in water. Add in vegetables, seasonings and ham shank or possibly hocks. Cover and simmer for about 2 hrs. Remove ham shank or possibly hocks. Remove meat from bones; dice and add in to soup. Serve warm, garnished with minced parsley.
    3. Yield: 6 to 8 servings.
    4. SOAK BEANS OVERNIGHT
