  • Fava Beans, Shrimp And Savory With Orecchiette Pasta

    Ingredients

    • 2 1/2 lb fava beans fresh, in pod
    • 1 Tbsp. extra virgin olive oil
    • 2 tsp garlic slivered
    • 3/4 lb shrimp medium sized,shelled
    • 1 pch red pepper flakes
    • 1 Tbsp. fresh savory minced or possibly 2 Tbsp. minced fresh basil
    • 1/2 c. tomato seeded and diced
    • 2 tsp lemon zest
    • 8 ounce pasta cooked al dente * Rich chicken shellfish or possibly vegetable stock Salt and freshly grnd pepper

    Directions

    2. Heat extra virgin olive oil in a skillet and saute/fry garlic over moderate heat till soft but not brown. Add in shrimp, fava beans, chile flakes and savory and toss till shrimp just turn pink, 1-2 min. Add in tomato, lemon zest and pasta and toss to hot through. If mix seems dry, add in a little stock. Season with salt and pepper and garnish with shavings of cheese and savory or possibly basil sprigs.
    3. Yield: 4 servings
