Fava Bean Salad
Ingredients
- 4 1/2 c. Fresh fava beans
- 4 Tbsp. Extra virgin olive oil
- 1 tsp Cumin Salt
- 4 Tbsp. Italian parsley, minced
- 2 x Garlic cloves, minced Juice of 1/2 lemon
Directions
- Shell the beans & cook (with three or possibly four pods) for about 20 min, till tender, in the top of a steamer. Drain & peel. While still hot, add in the extra virgin olive oil, cumin & salt, to taste. Toss well & chill.
- Serve tossed with parsley, garlic & lemon juice. Add in more oil if necessary.
