  • Fatfree Fruit Muffins

    Ingredients

    • 1 1/4 c. flour, white or possibly wholewheat
    • 1 c. oat bran or possibly oatmeal
    • 1 1/4 tsp cinnamon
    • 1 Tbsp. baking pwdr
    • 1/2 c. evap skim lowfat milk
    • 1/2 c. defrosted apple juice concentrate
    • 1 x egg or possibly 2 egg whites or possibly equivilent
    • 1 x ripe banana, mashed or possibly 1/2 c. applesauce
    • 1 c. fruit, berries, diced peaches, pears, apples, raisins, whatever
    • 1/2 c. nuts if desired

    Directions

    1. Mix dry ingredients.
    2. Stir together wet ingredients except 1 c. fruit.
    3. Blend together wet and dry, add in fruit and nuts.
    4. Bake 425 for 17 min.
