Fatfree Fruit Muffins
Ingredients
- 1 1/4 c. flour, white or possibly wholewheat
- 1 c. oat bran or possibly oatmeal
- 1 1/4 tsp cinnamon
- 1 Tbsp. baking pwdr
- 1/2 c. evap skim lowfat milk
- 1/2 c. defrosted apple juice concentrate
- 1 x egg or possibly 2 egg whites or possibly equivilent
- 1 x ripe banana, mashed or possibly 1/2 c. applesauce
- 1 c. fruit, berries, diced peaches, pears, apples, raisins, whatever
- 1/2 c. nuts if desired
Directions
- Mix dry ingredients.
- Stir together wet ingredients except 1 c. fruit.
- Blend together wet and dry, add in fruit and nuts.
- Bake 425 for 17 min.
