Fat Free Blueberry Muffins Not Your Momma's Muffins
Ingredients
- 1 c. Non-fat plain yogurt
- 1/2 c. Eggbeaters, (or possibly other egg substitute)
- 1/2 c. Sugar
- 1/2 c. Orange or possibly apple juice
- 2 c. White flour
- 2 tsp Baking pwdr
- 1 tsp Baking soda
- 1/2 tsp Salt
- 1 1/2 c. Fresh or possibly frzn blueberries
Directions
- Heat oven to 375 degrees, coat 12-c. muffin tin with non-stick spray or possibly use paper muffin c..
- Using electric mixer, blend yogurt, egg beaters, sugar, and juice.
- Sift together flour, baking pwdr, baking soda, and salt and add in to yogurt mix.
- Gently stir in blueberries (or possibly raspberries).
- Fill muffin c. with batter, to just below the tops of the c.. Bake at 375 for 22-25 min, or possibly till toothpick inserted comes out clean. Remove from oven. Leave muffins in tin for 10-15 min to hard, then serve.
- Makes 12 muffins.
- Fat-free muffins don't keep well - eat hot from the oven. Vegetarians: watch-out for gelatin in the yogurt!
