    Farro, Pea and Goat Cheese Salad

    I'd never had farro before, but it was delicious and hearty. A great substitute to rice.

    Ingredients

    • 1 cup farro
    • 1 cup or so snow peas cut into pieces
    • 1/3 cup mint, chopped
    • 1/3 cup almonds, toasted and chopped
    • 1 teaspoon lemon zest
    • 1 tablespoon plus 1 tsp fresh lemon juice
    • 1 tablespoon extra-virgin olive oil
    • 2 ounce goat cheese, crumbled (I ended up using garlic and herb goat cheese I got at the store and it was delicious)

    Directions

    1. Cook the farro in 2 cups water until tender. Drain excess water if needed.
    2. Cool completely.
    3. As the farro is cooking heat another pot of salted water and blanch the snow peas for about 30 seconds, until they're bright green.
    4. Drain and run under cold water to stop the cooking.
    5. Chop into pieces.
    6. Combine all the ingredients into the cooled farro and serve with crumbled goat cheese over top.

      I really enjoyed this combination of flavors. It was a perfect light dish for a hot summer evening. I was reminded very much of two summers ago in Italy!

        I haven't even tried it yet, but I can taste it in my head and it's delicious. I'm a Farro fan as I'm a veggie and it has lots of protein. The texture and taste are outstanding. The combo of goat cheese, mint, almonds and grain are great. I can't wait to make it!
