Ingredients

  • 1-1/2 BOW TIE PASTA
  • 1/2 STICK UNSALTED BUTTER
  • 4 GARLIC CLOVES
  • 10 OUNCES PANCETTA JULIENNED 3 SCALLIONS MINCED
  • 1 CUP GOOD WHITE WINE
  • 2 CUPS HEAVY CREAM
  • SALT AND PEPPER TO TASTE ALWAYS TASTE
  • 5 TBLS FRESH BASILCHOPPED FINELY
  • 2 TBLS FRESH PARSLEY CHOPPED FINELLY
  • GOOD GRATED PARMESAN CHEESE

Directions

  1. In large pot cook pasta till aldente.drain set aside do not rinse pasta ,In a large skillet heat butter over moderate heat and saute garlic .add the pancetta and cook till crisp.Drain the fat from the pan and return the pan to heat.Add scallions and deglaze with wine,reduce the wine to half,Add cream and seasonings ,and herbs blend well.Toss the pasta with the cream sauce top with parmesan and serve with salad and crostini.A Nice bottle of 2009 Georges Duboeuf B eaujolals -Villages its juicy fruity and bright No worries relax and enjoy MANGIA
