Family Favorite Chicken Casserole

This dish is, to me, the ultimate comfort food. I remember looking forward to my parents cooking this delicious chicken casserole in the cooler months. It wasn't often, which is part of why it's special. But whenever I smell it baking, it's like a hug from Mom and Daddy. I've added or changed small parts at different times in my life, but I always go back to the original.

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 box Stovetop Stuffing, prepared as per box instructions
  • 1 can green beans (I prefer fancy cut, other's may like french cut)
  • 1 sm can cream of chicken soup
  • 1 Tbsp mayonnaise (optional, I often skip it)
  • 1/8 to 1/2 tsp of Curry, depending upon your tastes
  • 1/2 tsp lemon juice

Directions

  1. Preheat your oven to 350*
  2. Bake chicken breast in a 9x9 casserole dish, covered in half of the soup, until just done (still very moist)
  3. While chicken is baking, mix second half of soup with mayo, curry & lemon
  4. Cut chicken into 1/2 inch squares
  5. Drain green beans and place on the bottom of casserole dish
  6. Cover with soup mix and chicken
  7. Add prepared stuffing, making sure it covers the top
  8. Bake for about 25 minutes
  9. Let it sit for about 5
  10. Serve hot
