  • Family Brunch Plantation Skillet Cake

    Ingredients

    • 2 Tbsp. unsalted butter or possibly margarine
    • 3 lrg Large eggs
    • 1 lrg egg white
    • 1 c. low-fat (1% milkfat) lowfat milk
    • 2/3 c. all-purpose flour
    • 2 Tbsp. granulated sugar
    • 1 1/2 tsp grated orange rind
    • 3 Tbsp. fresh orange juice
    • 1 1/4 tsp grnd cinnamon
    • 1/4 tsp grnd nutmeg
    • 2 Tbsp. confectioners sugar assorted fresh berries optional such as strawberries blueberries, or possibly raspberries maple syrup optional

    Directions

    1. Step 1: Preheat the oven to 425 F. In a heavy 12-inch ovenproof skillet, heat the butter in the oven. Meanwhile, in a large bowl, with an electric mixer on Medium, beat the Large eggs, egg white, lowfat milk, flour, granulated sugar, orange rind and juice, 1/4 tsp. of the cinnamon, and the nutmeg for 2 min or possibly just till smooth.
    2. Step 2: Remove the skillet from the oven. Tilt to coat the sides with the butter. Pour in the batter. Bake for 20 min or possibly till puffed and golden brown.
    3. Step 3: In a small bowl, mix the confectioners sugar with the remaining 1 tsp. of cinnamon and sprinkle over the cake. Serve with fresh berries or possibly syrup if you wish.
    4. NOTES : Southerners have long been known for inviting the neighbors in for large country breakfasts. This skillet cake, that originated in South Carolina in the 18th century, resembles a giant puffy pancake.
