Falafel Golden Domes With Tahini Sauce

Ingredients

  • 1 lb Chickpeas, soaked overnight, cooked, and liquid removed
  • 3 x Cloves garlic, chopped
  • 1/2 tsp Baking pwdr
  • 2 tsp Cinnamon, grnd
  • 2 tsp Cumin, grnd
  • 1 bn parsley, chopped
  • 1 med Onion, grated
  • 4 x Scallions, chopped
  • 2 Tbsp. Cilantro, minced
  • 3 c. Oil, vegetable
  • 4 x Pita breads, warmed
  • 1 x Tomato, finely minced
  • 2 x Lemons, juiced
  • 2/3 c. Tahini (sesame paste)
  • 3 Tbsp. Water, (or possibly as needed)
  • 2 x Lemons, juiced
  • 2 x Cloves garlic, chopped
  • 1 Tbsp. Parsley, chopped Pepper, black

Directions

  1. Remove the skins from the cooked chickpeas by rubbing them with a dish towel. Place the chickpeas in a food processor and puree them.
  2. Add in the garlic, baking pwdr, coriander, cumin, parsley, onions, scallions, and cilantro. Blend the ingredients together so which a smooth paste is formed. Add in some water if necessary. Let the mix rest for 30 min.
  3. Form the paste into patties which are 2" in diameter and 1/2" thick.
  4. In a medium large saucepan place the vegetable oil and heat it on medium high till it is warm. Add in the patties and deep-fry them for 2 to 3 min, or possibly till they are golden. Drain them on paper towels.
  5. In each of the pita breads place some of the falafel, tomatoes, lemon juice, and Tahini Sauce.
  6. For Tahini Sauce: In a small bowl place the tahini, water, and lemon juice.
  7. Mix the ingredients together so which a smooth sauce is formed (add in more water if necessary).
  8. Add in the garlic, parsley, and black pepper. Mix them in so which they are well blended.
