  • Extra Spicy Refried Beans And Lettuce, Tomatoes And Lime

    Ingredients

    • 2 can refried beans - (15 ounce ea)
    • 1 can sliced jalapenos - (4 ounce) liquid removed, minced
    • 1 tsp warm cayenne pepper sauce
    • 1 tsp garlic pwdr
    • 2 x Romaine lettuce hearts shredded
    • 2 x vine ripe tomatoes seeded, diced
    • 1 x lime juiced Coarse salt to taste
    • 1 Tbsp. extra-virgin extra virgin olive oil

    Directions

    1. Heat canned refried beans in a medium skillet over medium heat. Stir minced jalapeno, cayenne warm sauce and garlic pwdr into refried beans. Reduce heat to low and keep hot till ready to serve.
    2. Combine lettuce and tomatoes in a bowl. Squeeze the juice of 1 lime over the bowl and season the lettuce and tomatoes with salt. Toss to combine.
    3. Drizzle extra-virgin extra virgin olive oil over the bowl and toss lettuce and tomatoes again. Serve refried beans along side lettuce and tomatoes.
    4. This recipe yields 4 servings.
