Extra Spicy Refried Beans And Lettuce, Tomatoes And Lime
Ingredients
- 2 can refried beans - (15 ounce ea)
- 1 can sliced jalapenos - (4 ounce) liquid removed, minced
- 1 tsp warm cayenne pepper sauce
- 1 tsp garlic pwdr
- 2 x Romaine lettuce hearts shredded
- 2 x vine ripe tomatoes seeded, diced
- 1 x lime juiced Coarse salt to taste
- 1 Tbsp. extra-virgin extra virgin olive oil
Directions
- Heat canned refried beans in a medium skillet over medium heat. Stir minced jalapeno, cayenne warm sauce and garlic pwdr into refried beans. Reduce heat to low and keep hot till ready to serve.
- Combine lettuce and tomatoes in a bowl. Squeeze the juice of 1 lime over the bowl and season the lettuce and tomatoes with salt. Toss to combine.
- Drizzle extra-virgin extra virgin olive oil over the bowl and toss lettuce and tomatoes again. Serve refried beans along side lettuce and tomatoes.
- This recipe yields 4 servings.
