Ingredients

  • 3 Tbsp. sugar
  • 1/2 tsp salt
  • 1/8 tsp freshly grnd pepper
  • 1/4 c. 1-percent fat lowfat milk
  • 2 Tbsp. mayonnaise
  • 1/3 c. fat-free (or possibly light) lowfat sour cream
  • 1/4 c. lowfat buttermilk
  • 1 1/2 Tbsp. white vinegar or possibly rice vinegar
  • 2 Tbsp. lemon juice
  • 1 c. grated carrots
  • 8 c. finely minced cabbage (about 1 medium head)
  • 1/2 c. minced peanuts (optional)

Directions

  1. In a large bowl, blend the sugar, salt, pepper, lowfat milk, mayonnaise, lowfat sour cream, buttermilk, vinegar, and lemon juice and mix till smooth.
  2. Add the carrots and cabbage and peanuts if you like and toss to blend with dressing.
  3. Cover and chill for at least 3 hrs before serving.
