Espresso Granita With Lemon Twist Wafers

Ingredients

  • 6 c. espresso
  • 1/2 c. sugar
  • 2 Tbsp. Frangelico
  • 2 x strips lemon, peel, pith removed, 1-inch wide, by, 2-inches Lemon Twist Wafers butter, for brushing
  • 1 x egg white
  • 1/3 c. icing sugar
  • 1 x zest of 1 lemon, grated
  • 1 Tbsp. lemon juice
  • 1/2 tsp vanilla
  • 1/4 c. flour
  • 2 Tbsp. butter, melted Assembly whipped cream, for garnish cocoa, for garnish

Directions

  1. Put the espresso, lemon peel, sugar and Frangelico into a large bowl.
  2. Stir till sugar is dissolved and transfer to a shallow pan or possibly baking dish.
  3. Place on a flat surface in freezer for 1 hour or possibly till begins to freeze.
  4. Remove from freezer and stir well with wooden spoon or possibly whisk.
  5. Return to freezer for a further 1/2 hour and repeat stirring process.
  6. Repeat this procedure till mix has completely crystallized from the stirring and freezing.
  7. Keep frzn till ready to serve.
  8. Remove lemon peel.
  9. Lemon Twist Wafers:Preheat oven to 350 degrees F. Line baking sheet with buttered parchment paper.
  10. In a medium bowl, combine the egg whites, sugar, lemon zest, juice and vanilla and whisk till well blended.
  11. Add in the butter (slightly cooled) and stir till combined.
  12. Finally add in the flour and stir till combined.
  13. Make the wafers in batches using about 1/2 tbsp. of batter, spoon onto prepared baking sheet. Make 4 wafers per baking sheet.
  14. Spread batter with a small spatula or possibly the back of a spoon into rectangles about 1 1/2-by-6-inches.
  15. Bake in middle rack of oven for about 7 to 9 min or possibly till lightly browned around edges.
  16. Remove immediately from baking sheet and wrap around the handle of a wood spoon or possibly rolling pins while still warm to create a cylinder.
  17. Repeat with remaining batter.
  18. Assembly:Scoop out some granita into a tall glass, place in one wafer and top with a scoop of freshly whipped cream.
  19. Sprinkle with cocoa if you like.
  20. Granita means "ice" in Italian. It's a mix of frzn liquid, sugar and flavourings which gets stirred often during the freezing - this creates a grainy texture. It's completely refreshing.
  21. Yield is 8 servings.
