English Pea Salad

- 1 can english peas drained
- 1 can shoe peg corn
- 1 small jar pimentos
- 1 small diced onion
- 1/2 cup diced celery
- 1/2 cup mixed color bell peppers
- 1/2 cup oil
- 1/2 cup vinegar ( I like apple cider vinegar)
- 1/2 cup of sugar
- 1 teaspoon salt
Directions
- Small Dice onions and celery. Boil sugar and vinegar until dissolved, add oil and stir.
- Turn heat off and add all other ingredients. Mix. Place in a jar and refrigerate over night before eating.
