    Enchiladas Suisas (Chicken Enchiladas with Salsa Verde)

    Green sauce chicken enchiladas with heavy cream sauce. Muy delicioso.

    Ingredients

    • 3 cups Salsa Verde con Tomatillos, or use bottled (24 oz.)
    • 12 corn or flour tortillas, warmed
    • 1 1/2 cups shredded chicken
    • 1/2 tbs. Tex-Mex Diablo Dust, or taco seasoning
    • 12 oz. Monterrey Jack cheese, divided
    • 4 oz. cream cheese, softened
    • 1 cup whipping or heavy cream
    • Toppings:
    • 1/2 cup your choice Flavored Mexican Cream
    • 1 bunch scalliions, chopped
    • 2 tbs. cojita or feta cheese
    • 2 tbs, sliced black olives
    • chopped cilantro

    Directions

    1. Heat oven to 350 degrees.
    2. Pour one cup salsa verde into 11x7 baking pan.
    3. Mix chicken, 1 cup cheese, cream cheese, and taco seasoning, divide in twelve portions, roll into tortillas.
    4. Place seam side down in pan.
    5. Top with remaining salsa, then pour on heavy cream.
    6. Top with rest of Jack cheese.
    7. Cover, bake 20 minutes.
    8. Remove from oven.
    9. Drizzle on sour cream, then decorate with remaining ingredients.
