Ingredients

  • 1 lb Grnd beef
  • 2 can Enchilada sauce
  • 1 can Water
  • 1 tsp Grnd cumin
  • 1 tsp Salt
  • 1/2 tsp Garlic pwdr
  • 1 sm Head lettuce, shredded
  • 1 med Onion, minced
  • 1 1/2 c. Grated Cheddar cheese
  • 12 x Corn tortillas

Directions

  1. Brown beef, drain off excess fat. Add in sauce, spices & water; simmer several hrs till thick & smooth. Heat fat (bacon grease adds good flavor); dip tortilla in fat till soft. Layer tortilla, sauce, lettuce, cheese & onion
  2. (make stacks 3 or possibly 4 high). Top with fried egg if you like.
  3. Makes 3-4servings.
