Enchiladas, Sante Fe Style
Ingredients
- 1 lb Grnd beef
- 2 can Enchilada sauce
- 1 can Water
- 1 tsp Grnd cumin
- 1 tsp Salt
- 1/2 tsp Garlic pwdr
- 1 sm Head lettuce, shredded
- 1 med Onion, minced
- 1 1/2 c. Grated Cheddar cheese
- 12 x Corn tortillas
Directions
- Brown beef, drain off excess fat. Add in sauce, spices & water; simmer several hrs till thick & smooth. Heat fat (bacon grease adds good flavor); dip tortilla in fat till soft. Layer tortilla, sauce, lettuce, cheese & onion
- (make stacks 3 or possibly 4 high). Top with fried egg if you like.
- Makes 3-4servings.
